Unless those literally double or triple stamina damage, it's still not going to guard break a greatshield unless your opponent is careless with their stamina.
More importantly, even if those were guaranteed guard breaks, they're generally too slow to be practical. Kicks have a huge startup, just like DaS2 guard break, and guard break attacks on straight swords are so slow, you can circle strafe behind and backstab in the time it takes to execute one.

What made O&S difficult for most people was that they didn't level up enough on their first playthrough. It's a good boss but a fair bit of the difficulty comes from it being a chokepointand the whole thing with O getting stuck on S and snapping forward and/or spearing you through his ally's hitbox.

Fucked weapon balance.
Good areas. Felt truer to DS1 than 2 in terms of the path layouts.
Mostly good bosses. I didn't like the dankwood, and old demon king was flat out terrible. Everything else was at least okay or not troublesome, and plenty were good.
Slightly better character quests. Finding seigmeyer in Ds1 was retarded; 3 has a good mix up of hard to find and easy to stumble upon events.
Nothing special about the overall plot.

Design is top tier levelwise & aesthetically around the board, soundtrack is good as ever. Except for grouped enemies, it's even worse than DaS2.
Netcode has been appalling for me. Mabe the servers are overpopulated but I've been lagging badly with friends I've played previous games just fine with. I like the revamped matchmaking and password system carried over from BB though. Phantom range is still a problem.
The more I use it the more I realise how limited the Farron Greatsword is.
It's reach is mysteriously on par with most 1 handed swords and other greatswords will poise through attacks to trade against you, unfavourably. It's fun as fuck but it's stuck in a weird hole between power levels.
