The whole point of the Megali Idea was to unite all Greeks under on state, and taking all of the extra land you suggested would just be adding a ton more Turks to Greece and a negligible amount of Greeks. Not too much to explain really. The borders were inspired by pic related, as they would roughly encapsulate a majority of Anatolian Greeks. As stated before, the only Greeks that would be excluded would be Cappadocian Greeks and extremely tiny Greek communities scattered around inner Anatolia. Those could be handled through population transfers.
In regards to population transfers, I was thinking it should be possible, just have some set conditions. Given that the Turks would not willingly accept a population transfer of Turks from Thrace and Asia Minor, it would probably require that Greece occupies Turkey or controls them as a puppet. At the very least it would require Greece have Turkey in their sphere. With all the Turks being moved, you could spread them out among inland Anatolia. As for the small amount of Greeks in Turkey being moved to Greece, you could move most, if not all, to Constantinople, given that it would be very depopulated following the ejection of Turks from the area.

I'm aware of Crimean Greeks, but cores are up to MCG. In my opinion, I don't think Greece would want to anger Russia, given that Greece would find Russia to be a major ally (shared religion, history, and common enemy). Not to mention, there were never any historical claims (that I know of) during the time period towards Crimea, whereas the Anatolian coast was frequently claimed by Greek nationalist.

Why just Trebizond? The Greek majority in the area wasn't just in Trebizond, it was in the entire Pontus region (the teal, grey, and blue provinces in pic related).
Also, given that Greece would have to be in a very powerful position to even be able to take these lands, I don't see why they wouldn't push to take the rest of the Black Sea Anatolian coast (the pink and red provinces), which still had some Greeks in it, so that all lands are interconnected. I'd imagine it wouldn't exactly be fun to have to travel through Turkish territory to get to your exclave on land, and going by sea has its own problems.

Lad, it isn't just about Greece. If it was, I'd reshape all the provinces and states to the old Byzantine themes. HPM is considering implementing the changes, and he wouldn't want changes that mess with history. That's especially why I haven't changed any state borders because they conform to the Ottoman (who in most games as well as at the game start control Anatolia) vilayets.

HOI3 naval is pretty bad, especially when a single 3-stack of NAV can shred a fleet, even one with carriers, because for some reason "CAG Duty" doesn't include "sortieing to fight attacking naval bombers", you have to notice that the fleet is being bombed (lol have fun noticing that while you fight a "world war") and then manually select that CAGs for air superiority duty to get them to fight back.
Naval clashes in general in HOI3 also just don't feel very meaningful, it's pretty typical for the losing side to escape without casualty even when they were hopeless outclassed from the start of the engagement (you have to go to that fleet and keep micro'ing them onto the retreat province in order to start getting some kills), this leads to a tendency to have tons and tons of fleet battles just because it's so easy for a fleet to zip off with moderate damage, repair in a month or two, and race back out to fight again. Historical battle fleet engagements between major powers almost always resulted in meaningful losses (not just destroyers and cruisers) which were not easily replaced, and even repairs could put a vessel out of action for a year or more.

CAG duty in HoI3 includes stopping NAVs and other bombers, they simply don't launch if their ORG is low. Good players usually make 2-3x as many CAG as they have carriers just so they can rotate them in and out constantly.

It takes me about 20-30 mins at the start of the game to get Germany's OOB set up, and a few 10 minute micromanagement sessions here and there to keep it consistent until Barbarossa is completed. The restructuring after a successful barbarossa is a bit time consuming, but by that point the game is won anyway. Even switching the OOB west after Poland is eaten isn't that bad.
I have played Germany games all the way through Barbarossa and Sealion without ever being overly burdened by the warfare mechanics, and never letting the AI touch a single slider or unit. At least to me they are intuitive and immersive, which is what I want in a Grand Strategy game.
If I want to play something casual I'll play axis and allies or rise of nations. When I want to fully flex my autism I play HOI3.
Dumbing down the mechanics for casuals does little service to the series since it was meant for people who want to fully immerse themselves in the micromanagement required to wage a full scale war.
It was always meant to be a niche market. Trying to casualtize it kills it, kind of like what happened to the simcity series.

-Westernisation is impossible (you can change this by modifying the defines.lua files in the common folder, search fr the line WESTERNISATION_THRESHOLD = 999
and change that back to 7 or whatever you want)
-Colonial nation are formed at 11 provinces instead of 5, I changed it because i wanted the caribbean to be a direct dependancy of the crown rather than a different country altogether
-Some national ideas don't make much sense, like the austrian ones, while other countries like the isles and antioch have the generic ones
-Some nations have the historical_friend or historical_rival modifiers towards other countries, that is based on ck2 relations, for example navarra will hate france because in ck2 they were almost constantly at war
