Gae Bolg doesn't bend itself to hit the heart at the perfect angle but instead becomes some sort of tentacle shit that stretches to 4 times its normal size and throws Saber into the air. No, Saber isn't always the protagonist without fail, rather there's a few usual key points you have to fulfill to get that protag credit.
It helps to be the underdog, its usually the one that summons Saber, helps to be the weak one who doesn't know about the war enough so that it can be explained to the reader, an odd type of power that's hit or miss, last one standing, etc.
Sounds like Edelfelt sisters were in too good of a position in the war to be Protag credit. They've got decent power, set up, and come from a noble family. Also juggling between protags is an issue that you don't want, unless you're juggling between basically every master.
That's sort of all or nothing in a way.

If you show up with a superior weapon, strength, agility, etc, then it is possible to bridge the skill gap.
