If you're playing HoD just conquer and release your small neighbors for easy RP, you can westernize by 1850 or earlier if you get good infamy rolls.
In HPM just put the speed to 5x, reject "winds of westernization" events every time (you'll never see a rebel if you keep "isolation", which "winds of westernization" removes), give Russia and UK what they want in their events to prevent wars, and prepare for the Taiping rebellion. You can westernize by the 1880s without having done anything besides win the Taiping rebellion in ~1850.

Check the files. It's fairly simple, you just have to stick to the same demand figures and split them (or merge them) where goods are meant to fit. Also add production techniques, and calculate input and output costs based on an existing factory. If you can't figure it out yourself, I wouldn't try it though. I got halfway through an overhaul and just ran out of spare time

Ah, right. Well, when you feudalize you should focus on castle infrastructure because it gives castle tax and unlocks the next tiers of castle towns so you can get them ducats rolling in.
Why are you afraid to convert to feudal? Your levy size is going to shrink by a lot but that's about it, if you already have all of Ireland and improved the infrastructure to the point where your vassals will feudalize with you then you should be in the green. Any empty holdings will also get one free city and church, so you might want to feudalize as a new, young ruler so you can benefit from all those +granted fief bonuses you'll get.
