So I've only played (and loved) MHFU, also playing MHO (pretty fun desu, reminds me of MHFU and MHP3rd, doesn't look as crazy as the newer titles).
Then I see all these aerial and mounting shit and I thought it was God Eater or Dragon's Dogma, which isn't necessarily bad. Will a MHFU fanboy like me enjoy the newer titles if I plan to buy a 3DS to exclusively play them?

They do die in X and other games though. In non JP versions of all MH games they get knocked out no matter how you attack them, in the JP versions you have to knock them out to get their horns, or kill them to get their livers.

Not that guy. SCEA was against Capcom publishing MHP3rd HD because it doesn't have online and trophies. SCEA has to release the game from the usual trophies restriction and port the system SCEJ already made for the Japanese release of the game (Japanese version have online fine using AHP that SCEJ helped) at their expense. This is all because MHP3rd HD is a straight port using PS3's emulator.
Doesn't really matter anyway because MH3G and MH4 were announced 2 weeks after all this. So yeah, Sony America being bullshit about a PS3 MH game without online and Capcom Japan immediately made MH3G and MH4 for 3DS is that 2 weeks.

I feel like monsters who are super aggressive and accurate will just run right back into you again and cause you to get knocked down since there's only a few weapons where using the Adept Dash actually stops you right after you do the dodge.

Anyway, Generations is said to have about as many quests as MH4U anyway so it shouldn't be too big of a deal. Additionally they replaced Guild Quests with Deviant monsters.

I'm not him, but at LR there are various quests to get your chef shit and hunter art stuff. A good chunk of these are gathering quests. While they are technically optional, they might as well not be unless you plan on totally ignoring these things. There are quite a lot of these gathering quests and it's pretty agonizing at times. It's not something I'd want to do twice, that's for sure. Once you got that shit out of the way, it becomes a Monster Hunter game.

Arm9LoaderHax aka a9lh is a hack that loads before the 3ds OS itself even, giving it pretty much complete control over the system. This makes it possible to just run CFW on SysNand natively without needing emunand at all. The different weapon/style combinations are all over the place in their own quality. Some carry the weapon to their high placement in speedruns whilst others are just mediocre or awful. Aerial for many is a spamfest and I think a lot agree that Adept is too safe.

There was more to it than that. It hadn't been the first time they'd clashed with Sony on certain things, it's just that they didn't air most of their dirty laundry. The trophies and ad hoc bullshit was really just the camel's straw.
Essentially in the end it was just that Nintendo was more pleasant to work with than Sony was, and they saw potential in their 3DS/Wii U systems to enhance the gameplay with touchpad functionality, via shortcuts and new features and so on. It helps that Nintendo is willing to bend over backwards to do right by the MonHun team, pretty much developing peripherals and system features around them.
On the bright side, moving over to Nintendo has caused a bunch of new entries in the Hunting genre to sprout up for people with different tastes and different sensibilities to enjoy, and I view that as a good thing.
