I've found the purpose of the dummy finger:
It's to "unlock" the 4th dummy doll on the second floor
To unlock the 4th dummy you must:
>Take the finger first
>Go to the Second Floor
>Find the dolls looking to the wall
>go to the far corner of the room ( the one with a desk)
> Wait a few seconds
> The Doll will appear next to the button

Maybe it's something related with the first floor with hanging dolls. They are 6 at total and in the demo you will find 6 dummy dolls:

An interesting clue is the fact of the front of the room with the little dolls there is a mirror aiming upwardly. Maybe this is a hint that we should assemble all the dummy dolls in the second floor, that's why there are three that can't be destroyed and three others that can be moved.
However, after grabbing the chain cutter the 4th dummy disappear. I have been trying to assemble then together but without watching the tape it's quite impossible.
