It's basically photo mode. You can watch the girls play and take photos while they do it. Owner Mode also has it's own inventory and wallet as well as a shop. You can switch back and forth whenever you feel like it. Some quests will require you to be in Owner Mode. Some will require you to be in Girl Mode.
