It's not at all like Souls other than having a lot of numbers behind your character.
If you're into exploring and having TONS to do in terms of customization then you'll like it. The gameplay plays kinda like an MMORPG, if you ever tried FFXIV then it's basically a better version of that. To me the imense amount of player customization makes it feel really great, you can see it pay off in combat when tackling foes at a higher level than yours.

After playing on nothing but PC for the past months with the exception of SSB4 the 720p took a few minutes to get used to but it's still gorgeous. The combat's actually a lot more involved than it appears, the auto-attacks are just one facet of it, choosing your "art" moves properly to chain workable combos and nail down good timing to coordinate with your team's efforts is actually pretty engaging.
