Sure showed me. My personal experience is the opposite, but that would be just as valid as your personal experience in terms of figuring how these things work out.
I just like romance, I don't mind if my Yuri has a small side of another type of romance, and vice versa. As long as the characters are well written, and the focus never really gets muddled from the main romance, I don't see how it's a problem. That something did it wrong, and I haven't read either KnM or Shinozaki, but given your statement I will assume they did do it wrong, isn't the fault of the entire concept.

I think it'd be a good topic for a /u/ discussion thread, if you'd like to attempt starting one. Adolescent feelings are a big part of yuri, obviously, and uncertainty and shyness is a big part of that life stage. I take equal issue when, for example, some one-shot yuri doujin has high school students who are super comfortable in their own skin and assured and eager to express their romantic feelings and sexual urges. That doesn't ring true to me to the same degree that super chaste "sisterly" yuri does, but in the opposite direction. They both have their own roots in truth, but cater to a specific part of human development and gloss over others in order to align with their genre. There could also be a discussion about why stringently realistic yuri stories don't sell, but for right now I think you should learn to love subtext for what it is.

However, along the line of "super chaste yuri", many works outright refuse to acknowledge that yuri even exist. The creators obviously know that they are treading the line, but to what end?-- To escape from responsibility/burden from creating a yuri work? To have readers mooning over which ship is best to increase the longevity of their works? And I argue that creators deliberately set up their works for the latter all-the-while ignoring and i dare say--disrespecting yuri.
Look at Himawari Sketch for example--and like you said, caters to a specific part of human development (friendship, socialization, growing up), yet it ignores that little emotion called love (and all of its affiliates) and pretended that it doesn't exist. And I'm not even asking for much--a few words would do just... fine.
Sure, whichever grounds the term yuri umbrellas is debatable. But to gloss over such an important thing is just not right. And these sort of works led you on too--in the most direct way no less (like the the pic you posted)--without ever mentioning the feeling of love (and its affiliates).
Adolescent feelings and feelings of uncertainty at such age would bear the question 'Do I love/care-for ___?", don't you think?

The idea of using ecchi as an analogy was to make the point that it does not ultimately deliver. It's an endless tease. Whether in anime form or in simple pictures, you won't actually see the nipple, never see the vag, the main couple will never actually fuck even if they get each other's feelings, etc. There's no "getting it over", because it's not the intention in the first place.

And thus the cycle repeats, creators subtly hints that there's a yuri drop (there isn't), and fans go around placeboly think it's there. It became so depressing that they started to embrace it. But that's strawman argument with little basis.
