Tywin knows his shit, Cersei's a bit nutty but she knows how to rule too, and Joffrey may be a psycho but he's nothing a stern word from Tywin can't fix. True, they're ruthless to the Starks, but that's only because they're rebels.
If Stannis took the throne, his Lord of Light worship would cause a shitstorm for sure and there'd be instability everywhere.
