in the books they're a bit more freakier. we've only seen them fight in the prologue of the first book, but they're described as being extremely fast duelists and they don't make a sound when they walk, they just appear. they aren't ugly cracked faced looking zombies in the books either, they are supposed to be supernaturally beautiful, and when they speak to each other it sounds like cracking ice.
tBh, the way they are in the books probably wouldn't work well on a screen, but they work well in your imagination. i still haven't found a good visual representation online of how i picture them in my head.

The battle was an awful representation of any medieval period pitched battle.
1) massed archery is significantly less effective at actually killing people than it is in disrupting formations. (Wooden) shields + mail + linen/cloth padding is quite effective against war-arrows at range, since war arrows needed to be heavy to prevent splintering on high-draw bows
2) Cavalry only very rarely charged into each other. Horses are intelligent enough to try to avoid it, and given how a good horse could reasonably cost upwards of 7 young slaves, no one would use them in this manner. Cavalry are there to outrun flanks and, barring that, to disrupt formations and give chase to fleeing opponents, not to smash into each other or massed infantry.
3) Surrounding your enemy is not useful if the opponent doesn't have a (imagined) way to get out. Trapped men fight harder than if they would otherwise. Even ignoring Chapter 3 of Sun Tzu, it's extraordinarily wasteful of your troops to prevent an enemy from fleeing. The vast majority of deaths in battle occur during this pursuit phase; forcing the opponent to stand and fight just adds to your losses.
