Arya's storyline was so stupid and pointless. It added nothing to her character. We saw nothing to suggest she gained any new skills she didn't learn with Syrio or the Hound. I'm not sure this is true. In the books and the series you've basically got two big societies, Westeros and Essos, going through a period of social breakdown similar to ones that happened IRL.
Westeros is based loosely on Britain, and shows a society where the feudal order is breaking down. Series one basically starts in the "War of the Roses" in the 15th and 16th Century and the current storyline with the Faith Militant has elements of the Puritans, the Protestant Reformation and the English Civil War of the 17th Century. It's a society where feudalism is breaking down and social changes are coming (Winter is coming might be seen as a metaphor for some vast change to the way the world works)
In Essos it's the pre-feudal slave-owning societies that are collapsing - the Slavers of Yunkai, Astapor and Mereen having been wiped out by slave revolts, the Dothraki reduced to raiding petty villages and demanding horses instead of the great dreams of world conquest that Khal Drogo used to talk of. There it's Danyres rather than Winter which is the agent of change.
It's actually narrative style that's used in both historical fiction (Bloodlands is a good example) and history proper, so for instance the Age of Revolution "twin revolutions" framework used by Hobsbawm (where he analysis the Industrial Revolution and the French Revolution side by side) and in biographical studies of historical individuals (Alan Bullocks Hitler and Stalin, parallel lives, being a good benchmark for this style of history)
On the whole I think the world that GRRM has made is pretty good - it's close enough to reality so that we get the references and bring a little of our own real-world assumptions to the show, and that makes it more like historical fiction that pure fantasy in the mould of Tolkein et al.

There's nothing saying he has to faithfully stick to historical accuracy y'know, i mean if this bothers you then surely the existance of things like Dragons, or the ability to bring people back from the dead, must really piss you off.
It's a fantasy story that takes much of it's inspiration from history. Parts of the world are like the late medievil period, other parts of it are similar to earlier societies going back to classic antiquity.
It seems to me like this world has developed some basic chemical based explosives and such, but they haven't hit that point where Alchemy gives way to Chemistry, and where magic has no power in the world at all.

That wasn't in the 14th century though.
Early cannons were not the decisive weapon they would later become - they were very inaccurate, heavy and difficult to both set up and move around the battle and were usually restricted to castles and such. It really wasn't until the 16th and 17th centuries that cannon and musket began to overtake sword, lance and cavalry as the dominant weapons on the European battlefield.

It's not really analogous to any century. They have technologies that weren't around until well after the Middle Ages (e.g. telescopes, glass greenhouses, thermal heating) and some of these techs have been around for thousands of years. They have opium-based painkillers and penicillin. There are some structures in the world that are bigger than anything we have built in our world, even in modern times. Politically, Westeros is far more unified and centralized than any equivalent Middle Age empire. Westeros is really a mishmash of late medieval times - gunpowder + lots of renaissance and later tech.
Essos is an even bigger mess. Some places seem stuck in the Bronze Age, but politically many of the city states are very similar to those in early Modern times. Then you have the Summer Islands with ships that sound a lot like sailing ships from the late 15th century or later, which are much more advanced than anything anybody else seems to have in the water.
