The Dothraki can't siege for shit, but razing the countryside and murdering villagers would cripple the city that now can't feed its citizens. However, the Dothraki also gain little from it. So there's a compromise from both.
Besides, the dothraki don't give a shit about ruling cities. They just want to rape, raid and ride all their life.

When reading through other posts regarding this upcoming battle the Sunday after next I've heard a few reoccurring theories,
*Ramsey will die *Tormund may die *The Knights of the Vale will come and save the day *Davos may also be in trouble
All of these theories seem very plausible to me but I think there is a large possibility looming over us that has not been spoken about (to my knowledge) yet.
Sansa will die in the Battle because of Littlefinger.
I'm not just saying this because I personally believe there will be another big death this season but this outcome has been foreshadowed.
What is Littlefinger's plot? After the Battle concludes Jon's army will be left weakened but they will have a peaceful moment at Winterfell, this is when Littlefinger will ride up with the knights of the Vale. Sansa will convince Jon to let Littlefinger into the camp because she believes he is loyal (A mistake certain Starks have made in the past) and he will enter with his knights. Upon entrance Littlefinger will do a cocky monologue and then the knights of the vale will proceed to slaughter every Northen soldier and wildling they can. It will be a quick fit and certain characters will escape the massacre, including Davos. The survivors will be Jon and Sansa and through manipulation of Young Robin which has already been shown, Littlefinger will get him to command the execution of Sansa Stark which initially Young Robin will resist because of his feelings for Sansa but Littlefinger's manipulation will push him into that direction. Little finger will wish to execute Sansa because she knows to much of what he has done and he can not have that information out there where he is going next.
