These are minor side-effects of waring and is more of a reflection of Bran and Arya (as well as Jon and Rickon’s) personalities onto their dire wolves then the other way around.

In the books I believe there's a whole speech by Beric about each time he comes back he feels less human, he forgets happy memories and thinks only of war and killing.
Bringing Jon back in the books (if he died at all, that is) will be super weird actually, I can't imagine such POV. It would either be the best POV ever or the most disappointing. Maybe we'll only hear about Jon in the future from other POVs, who knows.
I said long time ago that GRRM should've kept out Dany's POV for example and build her up since book 3 or so like a mythical character whose presence is only witnessed by others, and eventual invasion. She was really bad in book 5 and that was tiresome to read.

I'm not saying he's going to be Robert Strong tier braindead. But he's going to be different, he's not going to be the same Jon. I don't even think we'll get PoVs from him any more, "Jon" chapters will be narrated by Melly. And yes, I do think George would do this to one of the "three main characters", since in book 5 he made Tyrion a depressive, violent, hateful rapist and tuned Dany into an ineffectual ruler and oppressor, allowing wanton bloodshed and torture to take place under her regime, and showed signs of madness. Jon hasn't shown any signs of having his personality fucked up, but resurrection will do that. George just does not have his winning protagonists be classic heroes. He loves tragedy and tormented characters and the bittersweet ending. It's actually very good storytelling, it's just not classic storytelling.
