My take on resurrection via R’hllor, is that the spirt or soul still truly dies and goes off to wherever souls go, while only the body (and this includes the brain) is reanimated.
The resurrected person isn’t really alive as they no longer have a soul, they’re something like a rebooted computer (brain) with no Internet connection (soul) anymore; they’re physically functioning but solely on the software (personality, memories, etc.) remaining on their hard-drive (their brain).
This lack of a “Internet connection” and gaps and corruption of the “software” are displayed by their behaviour; Beric’s loss of memory and his speech to Thoros and Catelyn (who was dead much longer) becoming a vengeful killer.

It was the episode where they decided to to abstract the war in the Riverlands and not include the Tullys. They started heavily diverging from the books at that point and it is the moment (when they skip over the battle of the green fork and change everything about the whispering wood) that the show jumped the shark.
