A single frozen blade from the white walkers weapon is more powerful than his entire body. He stands before beings infused by the old gods and magic with incalculable power, that can and will obliterate his soul with no more effort than it would take them to swat a gnat. Nothing he can do could possibly make a difference.
He could run. He could just quit. He could give in to the whispers that echo from the heart trees power and his past and lose himself.

Undoing part of his plot like that would be shitty anyhow. It would be more interesting to see what his new identity is like and how he adapts.
In the book he no longer cared what people think of him, and there was a new kind of strength growing in him because of that. He had always struggled with insecurity about his identity, belonging, status and it tormented him and led him down the road to betraying Rob and falling into Ramsay's trap. He doesn't have that weakness in the books anymore, and I'm hoping that they at least get that right about his character development in the show.
What happened to Theon was so awful, but undoing some of it would just cheapen his whole narrative. It's not like he's the only eunuch in the world, ether, why would he be the one special snowflake who gets his dick back?
