ASoIAF is actually a post apocalyptic scifi. Everything looks medieval because theyre being told through the characters POV, who dont know any better. Like the "roots" that Bloodraven is fused to. They're actually electrical cables, but Bran just assumes they are roots because tree roots are the things they resemble the most.
GRRM has written other works set in futuristic worlds that have been regressed to medieval levels of technology and society by catastrophic events like nuclear war before.
DnD were also hacks who didnt understand the nuances of GRRMs post apocalyptic world, and instead made it full on medieval.

Not on the show, in the show, Stannis is corrupted by his means-to-an-end philosophy. One-life-for-a-thousand-lives logic that defines his (show) lawfulness, becomes his downfall when all his lawful attitude is wasted in a losing battle. I think it happens to quick, but I think him being punished for all his kinslaying and morality stretching is a good ending. Baratheons have a history of this, with Bobby B. being glad that the Martell queen's children are killed brutally because it gives him the throne undisputed.

Him becoming a diplomatic leader is an interesting thought, but I find it unlikely that the people will accept him any more now than they did before. A big point of Theon's betrayal of Rob was that his sister was being favored as heir over him, and he generally wasn't being taken seriously. If capturing Winterfell didn't do the trick, do you think getting a bunch of ironmen killed and his dick chopped off will? He can't just come in and change their culture no matter how self destructive their culture is.
I'd much rather see him play a role in Ramsay's downfall. That would take some real bravery and bring him a lot of respect as well as some closure. It would have made for a much more compelling story than him running off with Yara to do her quest with her.
