The point of a castle is to hole up in a safe place while an invading army marauds through. Then once the army moves on, you send out your soldiers to reclaim the land. again. Armies back then couldn't really "occupy" a country indefinitely. They had a campaign season where they had to get the local lords to submit to them, or to replace the lords with ones who would. A castle allows the local lords to stall out the army, so that only one strong enough to take the castle or hold a siege could replace them. Bypassing a held castle on a campaign would also allow the castle to harass your supply lines.

Nonsense, we can see with Beric that he’s not the man he used to be (i.e “are you my mother, Thoros?”) and this is even more obvious with Catelyn, who is a literal monster.
Clearly, the longer one is dead, the worse the effects of R’hllor’s false resurrection are; Beric was only dead for a few hours and yet he’s still fucked up, while Catelyn was dead for days and is a straight-up zombie.
Jon will not suffer from this, as his soul is still alive in Ghost and can reinhabit his physically resurrected body.
