McGregor is used to using leverage against the UFC that they have never encountered before. They have bent to his every whim thus far.
Now that he lost to Nate, the UFC is going to try to strongarm him moreso back into their control.
My best guess is that McGregor said "I want X amount for UFC 200, take it or leave it" (probably a ridiculous amount like $15M) and the UFC tried to tell him no, so his response was fine, he'll retire.
The UFC is sick of being bitched around by him for so much money in comparison to everyone else, but Conor knows his own value and goes all in on himself day in, day out. They call his bluff and he says fuck you you will, you'll lose more if I pull out of 200 and never fight again.
The only thing about this is that if the talks with GSP are real, they might be trying to hook GSP back because of Conor's leveraging. GSP would likely take less than Conor to come back and headline 200, and the UFC would make just as much if he did.

The relationship IS mutually beneficial, but I don't think they are butting heads because of the UFC's net profit of dollars in/dollars out, but rather the precedent that is set by paying Conor so much and the rest of the fighters so little.
Conor McGregor making boatloads of money is great for every fighter in the UFC, I've been saying it for ages now, and the UFC is well aware of this and that's why we are where we are now. In my opinion, of course.

Conor doesn't have any real leverage. Whether UFC 200 does 2 million buys or 700k buys, dana and the Fertittas will still be making big profits this year. The UFC will still be here and profitable in five years. Conor is the one with a limited time in his career. He is negotiating from a short term position of power when the UFC really has no reason to concede when they can take a long term approach to their business. Mcgoobz is making a short term play against a company that is in it for the long haul. Conors "negotiating power" doesn't actually exist and he overplayed his hand.
