There is a ton of factors, technique, movement, speed, athleticism, past success, past defeats, mental strenght, reach height and weight advantages, footwork, power, finishing ability, cardio, jujitsu ability, wrestling credentials, wrestling sucess in mma, strategy, tactics, etc.
Eventually you learn how to account for all this things automatically, like a reflex, you see details in their movement and technique that others don't see while watching a fight.
This is the same for almost any sport, slowly but surely you if you are somewhat passionated and intelligent you will learn.
Some people just simply lack the ability to do this, even fighters, who only predict based on momentum and gut feeling.
