They haven't done that ever since the NFL was founded, why start now? to set an example? what about the other teams that cheated like the Broncos in the 90's? You can't just take away one teams championships if other teams are guilty of cheating too. You'd be required to revoke every single accomplishment from every team that has done something shady otherwise you'd be singling out one team which completely goes against the NFL's commitment to parity. At very best you could set rules that take affect the next season and start from there. You can't just take away things that were given 10+ years ago.
The way the NFL is set up makes it easy to cheat and get away with it. Hell teams can cheat and you wouldn't even be able to tell until word comes out. Lots of athletes do things to get a competitive advantage, that's the nature of sports. Not everyone is a good egg. There's cheaters in every sport, it's never going to change.

If the NFL started stripping wins and putting asterisks on teams that cheated you'd be surprised at how many of them you'd see. If you think only one NFL team has ever cheated than you've just barely scratched the surface. Think of how long these teams have been around and how many things where swept under the rug over the years some more controversial than others.
Most of the teams were able to get away with it because the NFL had less rules at the time. They didn't even test for steroids until 1987 and even then there are still athletes today who use PEDS. Stealing signals were done by almost every team (including the 90's Cowboys teams that won 3 owls) all the way up until 2006. Patriots said fuck that and continued to do it anyways. Brad Johnson paid to have the footballs altered for the Super Bowl. You'd have to put asterisks on a lot of teams.
