The games are a challenge sure but the whole "DARK SOULS IS THE HARDEST GAVE EVER" meme needs to die. Games these days hold your hand through everything with waypoints, tons of health, your character is basically a god and none of the enemies are treatening.

Nah, the difficulty was mainly due to newbies not knowing you had to upgrade your shit to avoid having to hit an enemy 9999 times with your drakesword/broken sword
In other words it was difficult because the game conveys information so badly to newcomers that the real struggle is against the design itself.
I say this as someone who has put like 400 hours into both.
In short, all you need to know is:
Find out how to upgrade your gear.
If you're doing stats (I usually stop at SL 30-50 so it doesn't get too easy) then build well.
Some enemies are easier to dodge, some are easier to tank with shields.
Do your first play with a lot of shield use,
second with dodge and dex,
third with a mixture and parry
