Yanderes have to transition between deredere and yandeiru, but that doesn't even necessarily mean violent, let alone violent towards the object of affection. A better description is "sick" or "deranged", which refers to mental/emotional characteristics. This includes violence, but also obsessive and creepy/repulsive behavior.
Mirai Nikki's Yuno popularized the character archetype in the West, so people automatically associate it with violence, both towards the lover (Yuki), and anyone who goes against him.
