I'm trying to go for the pic on the right. I got my haircut like 20 minutes ago, but I feel like I'm missing something, or worse I did something wrong.
What do I need to edit about my current haircut, to get it more like the pic on the right? I already know I need to clip the back....but what about the side where it parts over?
Also, what product is the dude on the right using ?

Where the sides meet the top, you have a very clean parting whereas the guy in the photo has a fade from the sides to the top. Also, you may not have the facial structure to have such a fuccboi haircut

The side where the hair flows in the opposite direction (on the right side of your head from YOUR perspective), use an electric hairclipper to mark a line between where your hair is long and to the side and where your hair is short, to better define the contrast
otherwise not too bad, but stuff like this often works well with a beard.

Also, the top is fucking trash, your barber sucks at point-cutting. You want texture and varied length, not one big swoosh of same-length hair.
From now on, never ask for an undercut again unless you go to a place that charges at least $100. If you go to a normal barber (not fucking sportclips, find a salon that charges like 20$) let it grow out for a couple months, then next time you go in just say "I want a 2 on the sides and back, and just thin out the top, but try to keep most of the length"
