Hey Outdoors, I'm going to require some of your expertise....

Myself and 15 other participants are plotting out the logistics of sociological experiment.

We have 16 acres with a well, construction materials, and a start up budget.

We are to survive on 1 acre per person, until we are self sustaining. We each get a computer and Internet.

The project will not be done until we are collectively earning more than we are spending.

What we're trying to work out logistically is the diet.

Non-perishable nutritious food, 3000 calorie per day per person.

Any diet recommendations? Perhaps a useful on line tool?

48,000 calories per day, for about 2 months,

FRIED potatoes. This will double the calories of your potatoes. I pre-bake my potatoes so they fry up better.

I make my own lard, often from pigs from the family farm (3-4 acres.) pic related, rendering lard on the stove.

1 pig will make between 1 and 2 gallons of lard, depending on fattiness of the pig. Me and my wife use about 1.5 gallons of lard per year. My parents get free pig food from the local cidery, mashed apples and stuff. You will get a bigger pig sooner by feeding them high protein pig food, but that is also more expensive. Best to have fewer pigs and feed them every single food scrap from your kitchen and garden.

To round out this diet, I would recommend milk and eggs, as lard fried potatoes are low in protein. But if you are farming your own pigs you will have plenty of protein in the pork.

Milk is going to be the biggest pain in the ass though so I'd try to do without unless you have only 2 dairy cows between everyone on your commune so you only have to milk once a week each.

For your laying hens, keep them alive 2 years then slaughter them. A pressure canner will be your best friend in turning their tough old meat into the best damn meat and broth you've ever eaten.

Roosters are great too, you can let them roam your land and they will fatten themselves up with very little effort on your part. But if you have layers you can't have too many roosters or they fight. I would do either roosters or layers, not both at the same time.
