Because muh tradition. Most Europeans have pretty old flags or their flags are based off of pretty old themes/national colors. They were created when some fuedal king shit out something to represent their kingdom. Most modern African countries had no unified history going back more than a century before independence. They could use whatever colors they wanted and, the tricolor market is pretty well saturated so to distinguish themselves they had to be more original. Of course some of them still ended up looking like shit, like Rwanda's old flag for example.
