Everyone had their personality toned done after the Soul Society arc, anon. She still shows her personality whenever she has the chance. Even in the middle of the war she is still able to retain her personality.
You also need to keep in mind that Kubo has introduced a lot more characters since the Soul Society arc. Instead of being able to focus on the individual character traits of 5 or 6 characters, Kubo needs to focus on all of his new characters.

So, a month ago I would have told you that I wanted her to fight with Ichigo and finally be able to protect him. However, not only did she accomplish this, but she also healed his sword. She's done so much more than I ever would have thought.
So, the next best thing would be for her to confess. It'll be really, really good character development, no matter what the development is.

I've spent most of the last 2 months or so utterly terrified for her because she was helping against Yhwach. But now that she's made it through that, and with Bleach ending in about 2 months, I've got no more fears for her. If she was going to die, that would have happened already. That's the problem though, she made it through the boss fight safely. When everything is going great for her, it manages to get even more messed up. Think about what happened in Hueco Mundo and the Fullbringer arc. I'm just really worried for her, especially after how happy she was at the beginning of the fight.
It also depends on what Yhwach's new world will be like. Will there be new enemies to fight? Will Ichigo tell Orihime to stay back this time? Will they get split up somehow? Whatever happens, I'm just worried, considering Yhwach wants to take away Ichigo's happiness in life. One of the best ways to do that would be to kill Orihime.

Yhwach and his quincy faction being dead will eliminate the major source of conflict in the current Bleach universe. Soul Society will reorganize and rebuild, the Soul King will be replaced (possibly by Aizen, removing him as a potential threat), and the most powerful Hollows will be on decent enough terms with SS. So her dream of a peaceful world can come true.
Besides that, there's the obvious shipping question these threads never let us forget. I don't think that Kubo's likely going to give an answer for that, but if there were an Ichihime ending, that would certainly be her true happiness. I'd have mixed feelings about that, but I want her to be happy.
