I got Dark Souls 3 and Rabi-Ribi so far. I've already beaten both of them. Are there any games I can put a ton of time into? I can see myself putting another 100 hours into DaS3, but I don't feel like it right now.

after awhile switching out pawns became a hassle more than a fun feature. Like you said, same with big monster kills. Eventually I would just use 3 sorcerers and blow shit up instantly while I focused as assassin. That way I never had to consider strategy and deal with pawn set up often.

Environmental Station Alpha is okay, its like a metroid game where it doesn't hold your hand. The bosses are annoying and don't really match the game itself, and the art gets annoying after a while. I understand pixel shit is all the rage with indie devs, but when your character is literally 7 pixels, there is something wrong.
Doom is pretty good, probably one of the best shooters I've played in years. Multiplayer is meh.
Aquatic Adventure is fun, but it has issues like being too short, no good map feature, and the only real enemies are the bosses. I also stress that even though its short, half of that time is spent back tracking after you get upgrades to move on to another area.
But in the end your opinion is your own.
