You give us 3 points for our basic curriculum and 8 options to choose from, but most of those options can be bought multiple times for greater proficiency which most people tend to do. So you either start specializing at the basic level already or spread out your points over more but inferior options. Why not have it so that the number of years you devote to the subject effect your proficiency level in the subject. So, if you take the same 3 for all five years, then you're a master in those 3. But if you split your attention between more, you drop to advanced level (for 3 to 4 years on a subject) or merely proficient (for 1 to 2 years).

it's worth noting that shapeshifting (and to a lesser extent illusion) makes stealth borderline redundant. unless you put more emphasis on the espionage side and make it all about persuasion, negotiation and otherwise getting people to do what you want. but that might be redundant too because of enchantment, assuming it's like D&D enchantment.

I'm not sure how you plan to balance your cyoa but I think ideally the basic curriculum should provide more general knowledge, and introductions to advanced classes. Mastery and specialization comes later. That's my opinion.

You seem to have misunderstood the whole idea behind the "no-play pile": It's where I put CYOAs that don't interest me, or have something in them that prevents me from enjoying them. Since I can't enjoy them, I see no reason to force myself into making a build for them, and having nothing constructive to say about those CYOAs, the only reasonable course of action is to ignore them.

This course of action benefits both me (don't have to waste time on something I don't enjoy) and the people who enjoy the CYOAs (don't have to waste time dealing with my complaints).
