I honestly don't see why giant squids/krakens or whatever are so hard to believe. The ocean is a fast place with a wide variety of life, with new species being discovered every day. Oceanic creatures have the ability to get much larger than land creatures because of their environment, since they don't have to worry about being crushed by their own weight.
I am not saying for a fact that the kraken is real, I'm just saying it doesn't seem all that implausible. If they are out there, it's only a matter of time before we get some hard evidence for it.

Although if it's a species that we aren't familiar with, then it COULD have some adaptation that let's it breach the surface for short times.
