there's a huge misconception here. Soul (or conciousness) has a value on it's own, but it's too complex for lower beings to handle.

Demons don't want your soul, they want simple life and/or emotional energy. Any soul-selling deals are bullshit, usually conducted to force human side of the bargain to do stuff that actually matters, like some animal sacrifices for example.

If you own one you can't be owned by someone. It gives you a "master" status no matter how low you are in other regards.

A soul is a collection of characteristics recognized by the universe as a complete thing.

Some demons (or humans) don't have one themselves, they were formed unintentionally by some god or a lesser being for a limited purpose and after that noone cares about them. But they want to keep living so then they need a soul. Owning one is all that matters, it doesn't have to be "your" soul in 1st person perspective. Only ownership matters.

Souls also relate to the place they lived, so they can be used as portal to that time period. A "worthless" human from any time period can still be used by a demon to travel there if they manage to take that soul.
