IMHO the best in the genre is "A Canticle for Leibowitz"

Miller later wrote a sequel called "Saint Leibowitz and the Wild Horse Woman", but had enough sense not to publish it as it turned out awful. Poor guy, after he died the family put it on the market, just not right. Avoid part II at all costs.
