For all anyone knows, we and they could be wrongly interpreting it.
It symbolizes the overarching theme of the universe, which is unity and also how the trinity fits into that unity. This is thought to lend protection against things that would like to upset that unity (demons, evil spirits, etc.) and many Christians in particular like the symbol for these reasons. The occultic significance is really what I just told you. It can be used in practices for protection and the like.
