There were decades after the invasion where all ancient documents in Briton were burned and writing was even outlawed so more could not be made. I understand a lot of Druidry is passed on orally, but that really just meant a lot of druids were put to death by Saxons or Vikings for not giving up their secrets.
Also, many of the groups supposed to be carrying on their traditions seem to be out of touch with what i know the original teachings were.

I think the neo-druid philosophy is more of a "Let's follow what we think the druids were like." Which in our culture, we view them as nature attuned spiritual leaders, so that's what people of that faith try to emulate. In all truth though, most ancient spiritualities used some form of sacrifice, it was just a way of showing thankfulness, and faith, I would assume. If Judaism can escape it's history of sacrifice, any faith can.
In terms of ancient druids, most evidence is skewed, and difficult to differentiate between roman propaganda, and truth, despite the Romans being so good at record-keeping. My guess would be druids filled the same role as shaman, or medicine-men. It seems the most logical, because shamanic animism was the dominant faith all throughout eurasia, pre-rome, and most of the world.

And i think sacrifice was originally based on the idea the physical world is bloodthirsty and maybe killing someone would make it happy. Then you might have had egregores grow from that. Seems pretty likely there was animal sacrifice practiced among the druids but human sacrifice was a propaganda claim the Romans used on everyone they attacked and i haven't seen any real historical evidence of it at all among the Druids. If it was practiced it's been well hidden.
