What is a good 1-2 season anime that a pleb can get into? With the exception of the 'Normie tier' anime (DBZ, KLK, attack on titan) I've only seen:

Gantz is probably my favorite out of the ones I've listed. The death and love triangles really intrigued me.

Neon Genesis Evangelion , the anime is great... After the show watch the movie : End of Evangelion... Then there are the Rebuild movies , that is a more casual Evangelion history.
