MSG/Trilogy
SEED is a watered down equivalent if you want something more recent
Any of the AU series can be watched standalone, just make sure not to watch Z/ZZ/CCA/0080/008th MS Team/Unicorn without watching the original in some form, though those last four are pretty separate from the mainline story regardless

You should start with ZZ Gundam
Whatever you do DON'T watch the first one first.
Most people started with Gundam Wing, my personal favorite is G Gundam.
