If you're not that familiar with 3D, planar mapping works like a projector. You project an image onto one or several objects from the cameras perspective
Computer remembers texture coordinates on the cubes next time you render it out.

I find that extremely unlikely. They probably made that animation by first simulating a cascade of blank blocks, then saving it so the blocks fall the exact same way every time, then painting the blocks based on their final positions to create the illusion of spontaneous order.
