pour 1.5oz rum over roasted cedar chips
aerated in tobacco smoke (cheap cigar)
While aerating stir 3oz of port with some simple syrup and angostura bitters in ice, pour mix into rum
Aerate and mix, then pour and serve with cheap cigarillo
That one would set you back between $6 and $10, unless you get more than one which would be cheaper each (at those specialty Japanese cocktail bars they give options to get something as a table)

The idea is basically that the ice he is using is very hard, dense ice that can't be made using a small mold. The merit of using ice like that, and of using one large piece per glass, is that the ice melts more slowly and has less surface area, chilling the drink more while diluting it less. When drinking scotch whiskey, water added is usually measured in drops. So having a ice ball gives you much more control over the flavor of your whiskey, and more time to drink it without over-diluting it. These ice balls have been largely made obsolete by metal ice cubes, but are preferred by some.

Those are kind of universal rules of Scotch or any whiskey, and Japan actually has a pretty strong bar-tending culture (if you look for it). But yeah, the only really acceptable alternative would be a chilled whiskey stone, which wouldn't really work that well in a bar.

Not much, a few different beers, only one I could name is Dos Equis because that's what my dad drinks now. I think I tried a bit of whiskey I was cooking with once, and Bartles and James wine coolers, those weren't terrible but not nearly good enough to substitute for anything I normally drink.
