They do this to make the conversations seem more fitting towards the actual characters. Morty and rick are the only ones who talk differently from the actual script because Morty is a anxious prepubescent teenager and Rick does space drugs. Also, the reason Rick burps constantly is because of the drink in his flask. His voice actor actually has to constantly drink sodas and beers to make the burps more realistic. The new one was EXTRA improvised. The first one they gave Roiland some prompts to riff off of while he was getting drunk in the recording booth. In the second one, his only inspiration was the liquor, so that's probably why some folk don't like it as much.
Personally I'd say that the second improv was a bit weaker, and that if they decide to do another in season three, they should go with the style of the first one.
