Also, there is a strategy of micing where you put the mic in a position that mimics the position of their ears, so you hear "what they hear"

Micing like this also helps with logistics and actually getting the sound recorded. Giving a mic to every instrument in a symphony orchestra + choir involves a monumental amount of equipment and setup, not to mention the horrendous amount of summing you would have to do before the signal even reaches the DAW.
