I think the problem is not them knowing the language is not phonetically spelled, it's when you don't know how to pronounce it to begin with.
Japanese is super easy to pronounce once you learn the poor amount of phonemes and whatnot because there's virtually no exceptions but if you don't know how to pronounce those to begin with, you're fucked obviously.

Do you know of any language courses that use the target language primarily, builds up, and has a good focus on grammar? I want to study Italian and German but you usually only ever find too easy or too hard unless you pay.

What I did for spanish was grind duolingo to completion while studying a grammar book or two, then switching to anki and loading it with sentences for grammar and vocab that I'd either encountered or wanted to expand upon. 3 months later and I'm about as shit as any other second year foreign language student, but it's good enough to test out.
Advanced grammar is a thing you have to study on your own, often as you encounter it, but the rest is better to understand and express intuitively at first and then learn the why of it later like you did with your native tongue.
10 grammatically correct sentences of a concept learned properly and reinforced with reading and listening is far better than a concept thrown on you by an archaic system built around grading someone. But then I'm clearly an SRSfag who took the anki pill.
