Alien Soldier, Gunstar Heroes, Contra 4 & Hard Corps, Mega Man 1, 2, X, X2 and Ninja Gaiden (NES).
They're all freakin' great. I'm recently discovering these type of games cuz back then when I was a kid I only had games for plebs like typical sports games like FIFA or NBA Live and games bundled with the console (Sonic, Golden Axe, SoR and Shinobi).

Those first 4 are Run and Gun. I'll personally recommend Alyssia Dragoon, Mega Turrican and Metal Slug et all but look at some BIG lists for lots of variety
Mega Man and Ninja Gaiden are classic challenge platformers. Try Ghosts n Goblins, Castlevania, possibly Zelda 2, Gargoyle's Quest 2 and Metroid although those three are a bit less linear.
Play Batman for NES. You can walljump and it has great music.
