Make sure you enable Roland in the sound configuration; which is a separate executable from the main game. I'm usually more of an FM fan, but American composers never got the hang of it, and midi almost always sounds better in American games.

MIDI can be either wavetable or FM synthesis though, it's only a format to pass notes and other shit around to the synth.

Example: Adlib is FM synth, but later PC sound cards used wavetable for MIDI.
