This song brings out a lot of emotions because the journey was just so much fun and finally reaching the end felt kind of melancholy. I did everything in the game, including the side-missions. This whole song seems to capture that feeling perfectly.

Beating super Mario 64 and hearing that ending theme never made me cry a lot as a kid. I did cry a bit, honestly, but then again I always cried over anything that ended... anything that I would get invested in I would get sad as shit over. Even get depressed. Prime example of this would be OoT, when I beat it I was literally depressed for days. Still not as bad as when I watched the season finale for Digimon tho. I didn't know season 2 was coming at the time, that ending made me depressed for fucking WEEKS.
As far as ending themes go though I have to say the sm64 ending theme has the right mix of nostalgia for me to still send me into near tears. And it genuinely is a great tune, really makes you feel like you finished a grand adventure.

I've said this in other threads before, but I was always impressed with the mood the first Paper Mario grabbed. Other Mario RPGs often increased what was at stake, added in a game-changing gimmick or villain, or filled it with self-referential humor; those are all awesome and I love them. But the first Paper Mario, while having a few twists and laughs, always felt like it was really honest and genuine. It had faith that a traditional "Mario saves Peach from Bowser" story could stand up on its own legs, and that even if the setup was cliched, it didn't mean the characters couldn't have strong feelings and relations throughout the whole thing.
I feel like this song captures the hopeful atmosphere perfectly, with just a hint of sadness.

I this song and ones like the one OP chose resonate with me more because they're not really used as background during gameplay, but rather to define a specific moment, scene, or place of time within a game. It symbolizes a point in which you reached or overcame something, and it's often that which you ultimately recall fondly upon, rather than the process of overcoming it in itself, much like in real life. The same goes for music during cutscenes and endings. In my opinion, that's what makes these kind of tracks so special.
