is it worth picking up a Sega or PS1 for one that have never owned or really played these systems before?

Or should I just continue exploring the depths of the NES and n64 library.

But yes, there are good games on non-Nintendo consoles, and even on computers.

As a matter of fact, I was a (mostly) Nintendo kid but I only buy Genesis stuff, because of the cheap prices and cool clamshell cases.
