Because it hides all the scaling errors you normally get when you try to display emulators at 640x480. At such wide resolutions, the scaling errors are not visible because they're too small for the CRT to show.

OLEDs make light of the right color, like a CRT or plasma.

LCD tvs have a light source and filter the incorrect colors out of it. You can never get true blacks, and vibrancy is all down a bit.

CRT phosphor had gotten to very good refresh rates, but LCDs/OLEDs will be there soon, we're stuck waiting for the next version of HDMI before 4k @ 120hz will be commonly available.

They can never work on LDCs because the mechanics of the light gun require a cathode ray tube.

Some one better suited to the details will probably correct me but it's detecting the color change from the actual electron gun in the CRT.

No, the problem is latency.

CRTs have ultra low latency and ghosting compared to LCD screens.

It's about a retarded as saying the problem with a cat never turning into a dog is latency. Infinite latency. Because it never happens, just like the electron beam never happens on an LCD.

A NES Zapper could work as it's simply the photodiode registering light on the same frame as the game logic is checking. So frame to display latency is the deciding factor. A 200Hz gaming monitor could work IF you could ensure it didn't buffer a frame for any longer than it had to.
One like the Guncom(guncon? The time crisis one.) requires precise timing of the scanline draw. For an LCD to emulate that it would require that it be able to update individual pixels on the display instantaneously to trace the incoming video signal. You have some wiggle room as this was why the guns needed "calibration" because even on CRTs display timing isn't exact. LCDs are updated in various patterns as is, NOT a frame at a time like people seem to believe. There just aren't any engineers working on the problem to come up with a scanline emulator for an LCD driver.
