Same reason all these movies trying to look like retro horror films just put a scratch filter on and use synth scores rather than shooting on film or lighting with blue lights, smoke and water and using physical and optical effects - because it's harder and requires more work and money.

thats the reason. making art assets takes a hell of a lot of time for small teams, and if you do nes style it can look decent because of nostalgia compared to ms paint stick figures.
