Look at the OP. That is the PlayStation version of FF5. It is a 5th Gen interpretation.
FF5 on PSX is 5th gen, FF5 on SNES/SFC is 4th gen. This is all I'm saying.

They're literally the same game though. It's like if I said Sonic 2 is the best game on the Saturn. Maybe it is, but nobody cares, it's irrelevant, because it's a Mega Drive game, not a Saturn game. I can understand if it's a proper remake, like, say, Super Mario All Stars on the SNES versus the original games on the NES, but in this case it isn't. The game itself is just FFV. The graphics and sound do nothing to showcase the capabilities of the PS1, which is fine, because it's not really a PS1 game. Do you consider River Raid to be a PS1 game? Sure, it was released on the PS1, so yes it is, but if somebody came in to a discussion and said River Raid was the best PS1 game people would understandably tell them to fuck off because it's an Atari 2600 game. Nobody comes to a 5th gen discussion to discuss almost exact ports of 4th gen games. If they wanted to do that they'd go to the 4th gen discussion.

Would Lunar: SSSC and EBC count, since they were mostly redone for the PS versions? I know that they're originally 4th gen games, but I feel like the PS versions have their own identity and technical changes.

They do. But in many cases the remakes actually look worse than the original.

Compare with the same area in the remake. It's more detailed, but there's less animation and what used to be hidden doors in giant trees leading to underground caverns are now just bushes that disappear and let you walk though a hedge maze.
The whole remake is like that, missing animations, music tracks and things changed for seemingly no good reason.

No way, 320x200 just didn't do it justice. Two button controls were awfully limited too.
So, take Extreme Pinball again, it looked great in 320x400, even if that might come off as weird.
