Heavyweight Championship Boxing.
Underrated, maybe because it's a Game Boy title, but really fun.

There's some small customization and progression options, as you can distribute points to improve strength, stamina or speed according to your style, and even select you personal finishing blow (even if it's just straight, uppercut or hook). The fighters' names are a little less goofy Japanese version (just "Boxing!!", by Tonkin House). I mean, Lefty O'Hook is pretty amusing, but still…

Evander Holyfield's Real Deal Boxing was a pretty sweet boxing game with a little RPG element involved. Though the stats didn't mean a whole lot if you knew how to pick apart the CPU controlled opponent.

Excuse the platform, but I'm trying to help OP here. This game is basically the unofficial Punch-Out that came out between the SNES and Wii ones. The gameplay is all-too familiar so you can dive right in, and it's got some beautiful hand-drawn animation. I truly feel this really is a hidden gem.
