I'm pretty fond of the shmup level in Gunstar Heroes.
Unless I don't have the lightning saber. Doing this level on a difficulty above normal without it (or the chaser fireball if you're really good with it) is so difficult that I just restart until I get it.

The only good weapons in the game regardless of difficulty are the lightsaber and homing+flame.

Especially when you've got player 2 piloting the option with a more focused weapon.
Then you're free to think specifically about flying.
Hammerin' Harry: Ghost Building Company has two shmup stages and they are very funny. Like, in the first stage he his flying in a plane and he is just flaping in the wind and in the second stage he shoots himself out of a canon to fly like superman.
